Fajitas are typically presented with hamburger or chicken, yet this recipe substitutes ranch raised catfish as the protein.


  • 2 pounds catfish filets
  • 1 cup lime juice
  • 3 cups mesquite wood chips
  • 2 tablespoons spread
  • 1 huge onion, cut into rings
  • 1 huge chime pepper, cut into strips
  • 2 garlic cloves, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper, coarsely ground
  • 8 corn or flour tortillas, warmed
  • salsa, sharp cream, guacamole and lime wedges for serving


  1. Place filets in an enormous plastic pack. Pour lime juice over fish and marinate in fridge for 60 minutes, however never again as juice will cook the fish.
